Look out for the street carts with the big flat woks and stacks of egg. This is often an eat-on-the-go takeaway dish. A must-eat for visitors, you’ll often spot ‘Pad Thai’ written in English too!

Khao Kana Moo Ghawp is a classic favourite  with crispy slices of pork belly stir fried with oyster sauce and the crunchy goodness of dark green Chinese broccoli leaves, served with fluffy white rice. Add a fried egg if you are really hungry and some fish sauce with chilli for an extra salty flavour.

Look out for restaurant style food stalls with a wok and a big piece of crispy pork hanging up ready to be thrown into sizzling spices. Here you order whatever you like at the wok, so don’t expect to see any menus. Pull up a plastic chair as one of the best Thai dishes suddenly appears before you as if by magic!

Issan Food from the North-East has a home in the city, with so many Thais coming to live in Bangkok from rural Thailand. Gai Yaang (grilled chicken) is the ultimate in comfort food; succulent marinated chicken barbequed on a charcoal grill. Enjoy with the citrus, chilli and peanut zest of Som Tam (green mango salad) and Khao Niew (sticky rice).

Look out for the barbeque motorbike side grills. While you are waiting for your chicken look for the big brown pestle and mortar of the som tam stall, with tomatoes and ripe mangos on show. Sticky rice is kept warm in small one-per-person bags behind the chicken grill. With a full country-style meal head for some greenery to enjoy such as Lumpini, Chatuchak or Benjasiri Park.

Jim Jum is a creative clay hot pot style of dining that is fun and interactive. Concoct your own flavours with noodles, meat and fish as your broth bubbles away over hot charcoals. Dip tasty morsels into fiery chilli sauce and a green onion dip. Ladle the soup into small bowls to savour the intense flavour.

Look out for hot pot after dark when the burners come out to light up the tables for a night of feasting. Order dishes as you eat, with a top-up of soup whilst the coals are still burning.

Bamee Naam is a nourishing bowl of Thai foodie goodness. Create your own soup with yellow noodles eaten with chopsticks, thin slithers of roasted pork and doughy wontons scooped up with a spoon. Add sugar, fish sauce, chilli flakes and vinegar to create the perfect balance of heat and sweetness.
